The Costa Brava is considered one of the most stunning natural regions of Spain. A place that combines the beauty of its white sand beaches with the impressive turquoise Mediterranean Sea. In honour to this land, we have created a sandwich made with local ingredients from the Mediterranean cuisine, combined with our delicious Girona Coca. It’s sandwich time!
- 1 Girona Coca
- 1 Red pepper
- 1 Aubergine
- 1 Onion
- 1 Vine tomato
- 1 Handful fresh endive leaves
- 6 Anchovies
- Romesco sauce
Wrap the peppers, aubergine and onion in a baking paper.
Bake the vegetables in an oven set to 180 ºC until cooked, approximately for 30 minutes.
Remove, let it cool and then peel and chop into strips.
Slice our Girona Coca open and toast.
Rub the Girona Coca base with half a tomato and top with the finely chopped endive leaves.
Heap the roasted pepper, aubergine and onion on top, then add the anchovies.
Finish with a dribble of Romesco sauce and place the other slice of coca on top.
